Harvested in the early days of October, when the olives are still green and brimming with natural antioxidants, AEGIS ESTATE Early Harvest represents the purest expression of the Corfiot grove. Produced in limited quantities from the local variety ā€œLianoliaā€ olive. This small-batch olive oil is prized for its bold, grassy notes and its balance of fruitiness and spice—a true reflection of the Greek Mediterranean terroir.
